Christmastime, #vegan style. Full glass of #DIY Baileys, don’t mind if I do.
Vegan DIY Baileys Irish CreamOur Christmas just isn’t complete without a glass of this (or two!) over ice. Ultra creamy and delicious, this vegan Baileys will knock your socks off. And not just because it’s strong! Our batch made about 3.5-4 cups. The actual yield is unknown because there was a lot of sampling going on!Ingredients:
1 can light coconut milk
1 can full-fat coconut milk
1/2 cup sucanat or brown sugar (I use coconut sugar,  
3/4 cup strong espresso or coffee, or to taste
3/4-1 cup (or to taste) whiskey, Jameson is great - though whatever you have is okay too!
pinch of salt 
Directions:
Combine all ingredients in a VitaMix or in a medium size bowl and whisk/blend until smooth; using a mixer will ensure no residual graininess from the sugar crystals, so if this bothers those of you using the bowl method, you can add all ingredients to a sauce pot & heat just until sugar is dissolved. 
Adjust sweetness and whiskey to taste/preference. 
Once combined, keep refrigerated. 
Once chilled, serve as you would with conventional Bailey’s - over ice, with coffee, or straight from the container.
Note: 
The whiskey will likely separate from the rest of the ingredients after about an hour, floating on the bottom. This is normal; give it a shake before pouring.
I use coconut sugar in lieu of other sugars in this recipe; though it changes the taste slightly, the health benefits & consistency in ingredients are more important to me!
Liking it a bit ‘sweeter’ than most, we found that we had to add quite a bit more sugar & whiskey to this base recipe to get it to taste the way we remember it - so if you find the same, don’t worry! You’re in good company :)
